Looking for winter comfort food that fills you up without weighing you down? This paleo chicken sausage recipe with sweet potatoes and cabbage is an easy, one-pot wonder. A complete meal in itself (or serve with a side salad), this meal is Whole30 and Paleo compliant!
I don’t know about where you live, but where I live it is SOME KINDA’ COLD RIGHT NOW. I don’t think we even make it out of the teens until next week. (Those are highs in the teens. The lows are right around zero!) I need something warm and cozy for dinner that still makes me feel great. Bonus points if it’s weeknight quick and doesn’t dirty all the pots and pans in my kitchen.
Well, this meal right here? It does all that.
Super simple. A complete meal all in one pot. Comfort food that doesn’t make you feel gross later. Paleo, whole 30, the whole nine yards. Throw some salad greens in a bowl and call it a meal.
Foodie FAQs for Paleo Chicken Sausage with Sweet Potatoes & Cabbage…
- Where do you buy chicken sausage? I get mine at Costco! The brand I buy is by “Amylu,” but I generally look for any brand that is marked as “paleo” as it will generally not contain fillers, antibiotics, hormones, sugar, chemicals, etc.
- Can I use red cabbage instead of green? You totally could. Just be warned that your whole meal will probably look purple-ish. That’s why I generally stick to green. Red will work just fine though!
- Can I use pork sausage instead of chicken? Of course. I try to avoid too much pork for a variety of reasons, so I bought chicken sausage. However, you could use any sausage that you like. Adjust your cooking times (and check for doneness!) if you are not using precooked sausage.
- What sort of kitchen tools do I need? Something along the lines of a cutting board and a chef’s knife, a wooden spoon, and a dutch oven (or large saucepan). That’s it!
- Do you have any other one-pot, weeknight meals on your site? You betcha! Try my Thai Chicken Curry, Sheet Pan Steak Fajitas, or Mango Chicken Stir Fry!
Alrighty. On to the recipe!
Paleo Chicken Sausage with Sweet Potatoes & Cabbage
Clean comfort food that's quick enough for a weeknight and only dirties one dish!
Ingredients
- 2 T. extra virgin olive oil
- 1.5 lbs. sweet potatoes
- 1/4 green cabbage (3/4 lb.)
- 1 red onion
- 4 cloves garlic
- 1 1/4 lbs. precooked chicken sausage
- 1 t. pepper
- 1 t. thyme
- 3 t. salt
- 1/2 c. water
Instructions
- Prep your veggies. Wash and skin the sweet potatoes. Cut into 1/2 inch cubes. Slice the cabbage into 1/4 inch strips. Dice the onion and the garlic cloves.
- Open the pack of chicken sausage and slice into 1-2 inch pieces.
- Heat the olive oil over medium heat.
- Add the onion, garlic, sweet potatoes, and cabbage. Stir frequently and cook until onions begin to soften and become fragrant (about 10-15 minutes).
- Season with salt, pepper, and thyme.
- Add the sausage and 1/2 cup of water.
- Give everything a good stir and cover with the lid.
- Let the dish cook until the sweet potatoes are fork tender. (If, at any point, the dish appears to have run out of liquid, add 1/4-1/2 c. more water so that it does not burn on the bottom.)
- Uncover, spoon into bowls, and serve!
