So, we are really, really into Mexican food at our house. Everyone likes it. It’s generally quick for a weeknight. And then there’s guac. Guac is life at our house. Or maybe just a love language. In either case, it means I win weeknight dinner if we have Mexican food.
Chicken and steak are the usual weeknight Mexican fare, I think, but fish is really fun and quick to make. We are also big fish eaters at our house. (Maybe because I feed my kids’ this stuff for their first non-breastmilk food.)
These broiler fish tacos are nice and light and feel really summery and like a nice change of pace from the normal taco varieties. Also, they’re ridiculously easy, and we generally need a 30-minute meal on weekdays.
Fish Taco FAQ’s…
1. Is this meal gluten and dairy free? What about Paleo?
Yes! This meal is totally gluten free as long as you use corn tortillas. Skip the cheese, and you’ve got a dairy free meal. Use an almond flour tortilla (I love these) or a lettuce leaf to make this meal Paleo. Totally easy to please several different diets here.
2. What type of fish do you use for this recipe?
I use whatever type of fish I can find at Costco that’s wild-caught! Generally I buy cod or mahi mahi, but you could use absolutely whatever you want! I really try to stick with wild-caught fish since farmed fish is fed some questionable food (like corn!), and I don’t mind buying it frozen to help with cost. Costco has big bags of individually vacuum sealed fillets, and it’s definitely the best price around for some quality fish.
3. Can I use the grill instead?
Absolutely! I use the broiler because it’s really quick for me (my husband is the family griller, and sometimes we eat before he gets home on a weeknight, or I’m making dinner while he’s working out). You can totally use the grill though! I would probably suggest going with Mahi Mahi for your fish since it’s a little bit more sturdy and will, hopefully, not fall apart all over the grill. Fish is tricky on the grill if it doesn’t have skin, but it can be done!
